Bobby Flay’s seafood concept at the Palms Casino Resort showcases the chef’s love of Latin and Mediterranean flavors. Hopelessly devoted to chilies, Flay uses anca, rocoto and aji amarillo varieties in dishes such as Sea Scallops with mustard green salsa verde, panca chile and Cotija cheese; Tuna Tartare with crispy green rice and Peruvian chili sauce; and Cured Salmon & Egg Tostada with rocoto hot sauce and black bean “butter”. There’s also a raw bar that offers sushi and ceviche. For dessert, the Ube Cheesecake with exotic fruit salsa is not to be missed.
